I also have been making these dumplings for 25+ plus years and agree with everyone else that all of a sudden (with no changes on my end) they are no longer light and fluffy. (if cooking all day, set it on low). Add the beef broth and vermouth (this will also deglaze the pan) and cover the pot with a lid. Cover pot and cook an additional 10 minutes. Cover and simmer over low heat about 1 hour until spare ribs are tender.
